Butternut Squash Bisque 10 8oz. portions

1 Tbls.  Olive oil

1 large clove garlic chopped

½ medium onion diced

2 med. Apples peeled and cored

8 oz. Roasted Red Peppers

1.5 lbs. Butternut Squash peeled, chopped and roasted

4 C. Vegetable broth

2 C. half and half (optional)

¾ tsp. Cinnamon

½ tsp. Nutmeg

Salt and pepper to taste

Roast peppers over gas burner on stove, under broiler or on a gas grill until the skin of the peppers are charred.  Place in Ziplock bag and allow to rest for 15-20 minutes.  Remove from bag and rub the charred skin from pepper.  You can rinse quickly to finish skin removal.

Peel, seed and dice butternut squash.  Toss with a tablespoon of olive oil and roast for 25 minutes at 350.

In a large kettle or pot add oil, garlic and onion.  Sauté until translucent.  Add apples, chopped roasted red pepper, roasted squash, vegetable broth, cinnamon and nutmeg.

Allow to simmer for 15-20 minutes on med low heat.

When all ingredients are tender add half and half if needed, blend until smooth with immersion blender, blender or food processer.

If bisque is too thick for your liking add just a bit more broth or small amount of water.

Season to taste and enjoy!

Come one, come all – if you’re a graduate of UMF, pour a beverage, practice sharing your best Farmington memory and story, and meet us on Zoom. We’ll be giving away prizes, playing trivia and just having a good time.
